    Throughout the centuries, history remained unsure exactly what the name meant.
    During the 14th century, it was a key European area for the outbreak of the Black Death plague.
    No fewer than five ‘Battles of Toulouse’ – including one in the 19th century – and three ‘Sieges’ are documented.
    For much of the 15th century, the root of their economy was a plant-based pastel blue dye; then indigo came along.
    The ‘dynastie Baudis’ (with Pierre Baudis as mayor for 12 years and his son Dominique serving for the next 18) transformed the city from historically left-leaning to center-right.
    It is the primary site of the 2012 gun attacks that killed seven people over eight days (the secondary being Montauban).
    There is archaeological evidence of human settlement as far back as the 8th century B.C.
    In fact, in pre-Roman times, it was a huge trade center between at least three major bodies of water.
    The Basilique Saint-Sernin, built around the 11th century, houses the remains of the saint himself.
    It earned its nickname of ‘la ville rose’ for its architecture, consisting of pink terracotta brickwork. (The pink hasn’t stopped there, either.)
    The Toulouse sausage – whose casing is not all that different than the standard Italian sausage – actually did originate here.
